Curried Quinoa Salad (best if sits over 2 hrs. to let flavors blend)

For the Salad

2 cups cooked quinoa

1 bunch diced scallions

1 dice red pepper

1 cup golden raisins

1/2 cup chickpeas

 

For the dressing

1/4 cup lemon juice

2 1/2 tsp. curry

1/2 tsp. each salt, pepper, allspice

3/4 cup olive oil
